Turmeric has a very little demand as a pure spice but is a major ingredient in curry powder. It can be used as substitute for saffron but only for the color; it will not give the dish the taste of saffron. It is used to color and flavor prepared mustard and in many pickling and relish formulas. It is used in meat, fish, and vegetable curries as well as other spiced dishes and chutneys, and in sauces, couscous, and rice dishes.
